About this deal

As I never steeped any gin I've made until now for more than four weeks, I did the same again. And I love the results: the drink is refreshing, sweet and tart, and really full of flavor. But I will let the next batch steep for longer, just to see if there is any difference. These berries are less green and will have turned a deeper golden, or even pale red, colour. Do I have to use sugar in my homemade gooseberry gin?

Ingredients I always wash all the gooseberries after topping and tailing and then freeze them for a least a week before I use them. If you have made ‘clean’ gooseberry gin - without any added sugar - then you’ll probably want to pair your homemade tipple with a mixer; we love an elderflower tonic water, as the delicate sweetness really complements the tart flavour of the gooseberries.

However, once you’re into July or August, the gooseberries are a little more mature, softer and sweeter - easier to eat just as they are. When I first tasted Gilbert’s grog we just had one green gooseberry bush in the garden. A nameless variety that I’d swapped with an old gardener in the village for a few jars of chutney. It’s easy to miss an occasional berry and this one bush has self seeded – the progeny are two hefty children and just this year I spotted a new baby.

Well, that seems to be a controversial issue when it comes to making gooseberry gin. There are recipes instructing you to let it steep for 4 to 6 months and there are other people who only steep the berries for 2 weeks. Making gooseberry gin is quite like making sloe gin. I prefer the dark “dessert” variety that ripen to a red wine colour in late July or August. Believe it or not they have a natural sweet intensity – unlike the usual tarty green unripe things you come across right now – so they’ll need far less sugar.Use a basic, cheap gin.
